Bavarian Roast Pork with Potato Dumpling

Ok, so the picture doesn't look exciting.  But I am speaking to your stomach now, not your eyes.  This authentic German dish, although a bit plain, has an appeal that is quite addictive. Give it a try before you say anything.

The ingredients to make Bavarian Pork

4 boneless pork sirloin chops
2 to 3 garlic cloves, minced
2 tablespoons cooking oil
1/2 cup seasoned flour
1/2 pound mushrooms, sliced
1 bunch scallions, sliced
1/2 teaspoon thyme
1 can dark beer, room temperature
1 to 2 Tb. sour cream (optional)

How to cook Bavarian Pork
In a pan add add 1 tablespoon of oil and garlic and saute; then lightly flour pork and brown until golden. Remove pork and set aside. In same skillet, add another tablespoon of oil; saute the scallions and mushrooms. Return pork to pan; sprinkle with thyme. Then the fun part, add 10 oz beer, depending on thickness of cut; bring to boil. Cover and simmer for about 8 minutes for thin, and 15-20 minutes for thick. Spoon sauce over the meat and serve. (For a richer sauce, add 1 or 2 tablespoons sour cream just before serving.
